🫐💜 Blueberry Cream Cheese Loaf — Moist, Creamy & Irresistible
Whoever posted the blueberry cream cheese loaf recipe the other day… THANK YOU! 🥳❤️
I’ve officially fallen in love with this loaf. The buttery cake, juicy blueberries, and creamy pockets of sweet cream cheese come together in the most delicious way.
Warning: making this loaf may cause excessive sniffing of your oven window, repeated trips to the kitchen, and completely unrealistic confidence in your baking skills. 😂🫐
It’s that good!
🛒 Ingredients
For the Loaf
- 1½ cups all-purpose flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk
- 1 cup fresh or frozen blueberries
For the Cream Cheese Filling
- 8 oz (225 g) cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg yolk
- ½ teaspoon vanilla extract
- 1 tablespoon all-purpose flour
Optional Glaze
- ¾ cup powdered sugar
- 1–2 tablespoons milk or lemon juice
- ½ teaspoon vanilla extract
👩🍳 Instructions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease a standard 9×5-inch loaf pan and line it with parchment paper, leaving a little overhang to make removing the finished loaf easier.
2. Prepare the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. Make the Cream Cheese Filling
In another bowl, beat the softened cream cheese with the sugar until smooth.
Add the egg yolk, vanilla, and flour. Mix until creamy and well combined.
Set aside while you prepare the batter.
4. Make the Loaf Batter
In a large bowl, beat the softened butter and sugar together until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
Gradually add the dry ingredients, alternating with the milk. Mix just until combined—don’t overmix.
5. Add the Blueberries
Gently fold the blueberries into the batter.
If using frozen blueberries, you can add them directly from the freezer. Tossing them with a small amount of flour first can help prevent them from sinking too much.
6. Layer Everything
Spread about half of the batter into the prepared loaf pan.
Spoon the cream cheese mixture over the batter, keeping it mostly in the center.
Add the remaining batter on top and gently smooth the surface.
7. Bake
Bake for approximately 55–70 minutes, depending on your oven.
The top should be golden, and a toothpick inserted into the cake portion should come out mostly clean. Avoid inserting the toothpick directly into the cream cheese layer.
If the top starts browning too quickly, loosely cover it with foil during the final part of baking.
8. Cool Completely
Allow the loaf to cool in the pan for about 15–20 minutes.
Carefully lift it out using the parchment paper and transfer it to a wire rack.
Let it cool completely before slicing so the cream cheese layer can set properly.
🍋 Optional Glaze
Whisk the powdered sugar with milk or lemon juice and vanilla until smooth.
Drizzle over the completely cooled loaf.
The slight tang of lemon is especially delicious with the blueberries. 🫐🍋
💡 Helpful Baking Tips
- Use room-temperature cream cheese for a smooth filling.
- Don’t overmix the batter once the flour is added.
- Fresh blueberries work beautifully, but frozen blueberries are also convenient.
- Let the loaf cool completely before cutting.
- For the cleanest slices, use a sharp knife and wipe it between cuts.
📖 A Little History
Blueberry quick breads and cream-cheese-filled cakes combine two beloved baking traditions: simple American-style quick breads and rich, tangy cream cheese desserts.
Blueberries became especially popular in baked goods because their natural sweetness and bright color pair beautifully with buttery cakes, muffins, and loaves.
Adding a cream cheese layer takes the classic blueberry loaf to another level, creating a soft, creamy contrast in every slice.
