- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- 1 tablespoon chopped cilantro

- 1–2 tablespoons water, if needed, to thin
👩🍳 INSTRUCTIONS
1️⃣ MAKE THE DRESSING
In a small bowl, stir together the mayonnaise, sour cream or yogurt, lime juice, salsa, chili powder, cumin, garlic powder, cilantro, salt, and pepper.
Mix until smooth and creamy.
If the dressing is too thick, add a little water, one tablespoon at a time, until it reaches your preferred consistency.
Cover and refrigerate until you’re ready to assemble the salad. 🥄❄️
2️⃣ SEASON THE CHICKEN
Pat the chicken dry.
In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
Rub the seasoning mixture over both sides of the chicken.
Drizzle with olive oil and finish with fresh lime juice.
3️⃣ COOK THE CHICKEN
Heat a skillet over medium heat.
Cook the chicken until browned on the outside and cooked through, turning as needed.
The chicken should reach 165°F (74°C) internally at the thickest part.
Transfer to a plate and let it rest for several minutes.
Then chop the chicken into bite-sized pieces.
🥗 4️⃣ PREPARE THE SALAD
In a large bowl, add:
🥬 Chopped romaine
🫘 Black beans
🌽 Corn
🍅 Tomatoes
🫑 Bell pepper
🧅 Red onion
🥑 Avocado
🧀 Shredded cheese
🌿 Fresh cilantro
Give everything a gentle toss.
🌮 5️⃣ ADD THE CHICKEN
Add the chopped seasoned chicken to the salad.
Pour over some of the chilled dressing.
Toss gently until everything is lightly coated.
Don’t add all the dressing at once—you can always add more at the table.
🥑 6️⃣ FINISH THE SALAD
Just before serving, sprinkle crushed tortilla chips over the top.
For extra flavor, add:
🍋 A squeeze of fresh lime
🌿 Extra cilantro
🌶️ A little sliced jalapeño
🥑 A few extra avocado pieces
🧀 More shredded cheese
And there you have it—a colorful Tex-Mex bowl ready to enjoy! 😍
🌶️ THE METHOD
The secret to this salad is layering the flavors.
First, chill the creamy lime dressing so the flavors have time to blend.
Next, season the chicken generously with Tex-Mex spices and cook it until tender.
Finally, combine fresh vegetables, beans, corn, avocado, cheese, and chicken before adding the dressing.
Keep the tortilla chips until the very end so they stay crunchy. 👌
🕰️ A LITTLE HISTORY
Tex-Mex cuisine developed from the blending of Mexican culinary traditions with foods and cooking styles that became popular in Texas and the wider American Southwest.
Ingredients such as corn, beans, chili peppers, tomatoes, cheese, and cumin are commonly associated with Tex-Mex-inspired dishes.
Modern Tex-Mex salads take those familiar flavors and turn them into a fresh, colorful bowl—perfect for everyday meals.
This chopped chicken version is especially popular because it combines the freshness of a salad with the hearty flavors of a Tex-Mex dinner. 🌮❤️
