👩🍳 INSTRUCTIONS
1️⃣ PREPARE THE CHICKEN
Pat the chicken dry with paper towels.
Mix paprika, garlic powder, onion powder, thyme, salt, and pepper.
Rub the seasoning evenly over both sides of the chicken.
Heat olive oil in a large skillet over medium heat.
Sear the chicken for several minutes on each side until nicely browned.
It doesn’t have to be completely cooked through at this stage because it will continue cooking in the casserole.
Transfer to a plate and let it rest.
⸻
2️⃣ PREPARE THE VEGETABLES
In the same skillet, add the chopped onion, carrots, and celery.
Cook for approximately 4–5 minutes until they begin to soften.
Add the minced garlic and cook for another 30 seconds.
The kitchen should already be smelling wonderful. 😍
⸻
3️⃣ ADD THE RICE
Add the uncooked rice to the skillet.
Stir gently with the vegetables for about 1–2 minutes.
Add the chicken broth, milk, thyme, paprika, salt, and pepper.
Stir everything together.
⸻
4️⃣ ASSEMBLE
Transfer the rice mixture to a greased baking dish.
Arrange the chicken breasts on top.
Cover the dish tightly with aluminum foil.
The cover helps the rice cook properly and prevents too much moisture from escaping.
⸻
5️⃣ BAKE
Preheat the oven to 375°F (190°C).
Bake covered for approximately 35–45 minutes, or until the rice is tender and the chicken reaches 165°F (74°C) internally.
Cooking time can vary depending on the size of the chicken pieces and your baking dish.
⸻
6️⃣ ADD THE PEAS & CHEESE
Carefully remove the foil.
Stir the peas into the rice around the chicken.
Sprinkle the shredded cheddar cheese over the top.
Add Parmesan if desired.
Return the casserole to the oven uncovered for another 5–10 minutes, until the cheese is melted and lightly golden.
⸻
🌿 7️⃣ FINISH
Remove from the oven and let the casserole rest for about 5–10 minutes.
Sprinkle with fresh parsley.
Then serve!
🍗✨ Look at that golden cheesy top!
⸻
🍽️ SERVING METHOD
Spoon the creamy rice and vegetables onto each plate.
Slice the chicken into pieces and place it over the rice.
Serve with:
🥗 Fresh green salad
🥦 Steamed broccoli
🥕 Roasted vegetables
🥖 Warm bread
🍋 A little fresh lemon
It’s a complete, comforting family-style meal.
⸻
🥄 THE METHOD
The secret to this recipe is building flavor in stages.
First, season and brown the chicken.
Next, cook the vegetables to develop their flavor.
Then add the rice and liquid before everything goes into the oven.
Finally, finish with cheese and fresh herbs.
Season → Sear → Sauté → Bake → Finish → Serve.
Simple enough for everyday cooking, but special enough for Sunday dinner. ❤️

🕰️ A LITTLE HISTORY
Chicken and rice dishes have appeared in many different culinary traditions around the world because both ingredients are affordable, versatile, and easy to combine with vegetables and seasonings.
Home cooks have long adapted these dishes based on what was available in their kitchens.
Casseroles became especially popular in many American homes because they allowed families to combine several ingredients into one convenient baked meal.
That spirit of practical, comforting home cooking is what makes recipes like this feel so familiar.
And when a recipe comes from Grandma?
It becomes even more special. ❤️

👩🍳 GRANDMA’S LITTLE TIPS
✨ Don’t skip browning the chicken. It adds extra flavor.
✨ Keep the casserole covered while the rice cooks. This helps retain the moisture needed for the rice.
✨ Check the chicken with a thermometer. The thickest part should reach 165°F (74°C).
✨ Let it rest. A few minutes helps the casserole settle before serving.
✨ Use freshly grated cheese if you want an especially smooth melted topping.
✨ Add your favorite vegetables. Broccoli, mushrooms, corn, or green beans can work beautifully.
